It’s Sunday morning and I’m the only one awake (other than the fur/feather babies). I know the hubs is still fast asleep but I want to do something sweet for him. After all, he does put up with my junking and crafts and projects and food experiments and…….well, whatever pops into my head at the moment.
So, I poke around the kitchen to see what I have. His favorite flavor is strawberry and I have plenty of strawberry jam I made last summer. Hmmm, there is a tube of croissants in the fridge and I have some cream cheese. Perfect!
This is a simple but delish way to tell someone you love them. Store bought croissants are a staple in my house. You can use them for dinner, dessert, appetizers, and even more. And who doesn’t like cream cheese and strawberries?
These were very quick to whip up. I had them made and in the oven in about 10 minutes. And, you probably have the ingredients already like I did so there is no pre-planning. This can be a spur of the moment early morning pick me up or a quick after dinner dessert.
First, I softened 4 oz of cream cheese. To soften, I just put it in a small microwave safe bowl and popped it in the microwave for about 15-20 seconds. Be careful not to melt it, you just want to be able to stir in the sugar easily and still have it stay fluffy. Then mixed in 4 Tablespoons of sugar until creamy. I broke open the croissants and lay them out on a sheet of waxed paper. Divide the cream cheese evenly between the 8 croissant triangles and spread the cream cheese down the center.
Place a spoonful of strawberry jam also down the center of each on top of the cream cheese. Roll up starting at the large end and place on a cookie sheet lined with a baking sheet or parchment paper.
Bake according to the directions on the croissant package, about 10-12 minutes at 375 degrees.
As the croissants are baking, make a simple glaze. In a small bowl, place 1/4 cup powdered sugar. Add a few drops of milk at a time to make a thick creamy glaze. Once the croissants come out of the oven, allow to cool for about 10 minutes and then drizzle the glaze over the top with a spoon.
See? Wasn’t that easy?? Don’t they look scrumptious? I was so excited that I took a couple up to the Hubs to serve him in bed. How did he like them, you ask? Well, in true Hubs fashion, he snorted and turned over in his sleep……so I ate them!
Easy Cream Cheese Strawberry Croissants
1 can packaged croissants (8 in a can)
4 oz cream cheese, softened
3 Tablespoons granulated sugar
16 teaspoons strawberry jam (or any jam of your choice)
1/4 cup powdered sugar
1-2 teaspoons milk
Preheat oven to 375 degrees. Place a baking sheet or parchment paper on a cookie sheet.
Soften cream cheese, if necessary, by placing in microwave dish and heating for 15-20 seconds until just soft enough to spread. Add 3 Tablespoons sugar and mix. Set aside. Separate the 8 croissants and place on a sheet of waxed paper. Spread 1/8th of the cream cheese on each of the croissants, just down the center, leaving about 1/4 inch around edges. Then spread 2 teaspoons of jam down the center of the cream cheese. Roll up the croissants starting at the larger end.
Place on cookie sheet with the point on the bottom to prevent the croissant from unrolling.
Bake at 375 for 10-12 minutes or per the croissant package instructions. Allow croissants to cool 10 minutes before adding glaze.
As the croissants are baking, stir a teaspoon of milk into 1/4 cup of powdered sugar. Stir well. If necessary, add a few drops of milk at a time until it is a thick creamy glaze. Once croissants have cooled slightly, drizzle glaze over croissants.
